Although I don’t always have time to do it, one of the things I enjoy the most is cooking and what better than using our time of quarantine to experiment with new recipes.
This week I tried to make some desserts that, besides being delicious, are super easy to make at home.
Here are my 5 favorite recipes!
1. Lemon pie… or mango pie 😊
1 can of condensed milk (Lechera)
2 bars of cream cheese (Philadelphia)
1 cup of sour lemon juice (10-12 lemons)
2 packet of Marías Cookies
2 sticks of butter of 90gr.
To prepare the base of the pie, grind the Cookies Marías in the blender, melt the butter and mix well with the ground cookies in a bowl. Then, arrange the mixture in a glass or plastic refractory, covering all the edges.
For the pie mixture, squeeze the lemons (without seeds) and liquefy the juice with the condensed milk and cream cheese until it is a thick mixture. Once ready, empty on the base of the pay covering the entire refractory.
Finally, cover the mold with aluminum foil and put it in the refrigerator for 3 or 4 hours and it is ready to be enjoyed!
TIP: IF YOU WANT MANGO PAY, carry out the same process, but instead of lemon juice, add 3 mangoes to the mixture of condensed milk and cream cheese in the blender, so easy!
2. Chocolate mousse … with Baileys and strawberries 😊
200 grams of dark chocolate
60 milliliters of Baileys
2 cups of whipping cream
1 package of strawberries or raspberries
Whipped cream (optional)
In a saucepan over medium heat, melt the chocolate until you get a thick mixture. Add Baileys and ½ cup of whipping cream and mix again. Gradually incorporate the remaining cup of cream.
Once the mixture is thick, remove from heat and serve in glass containers. Freeze for two hours and serve cold with whipped cream and strawberries on top, I’m sure you’ll love it!
3. Banoffee… with caramel 😊
2 packages of Maria Cookies
2 sticks of butter of 90gr.
200 ml of whipping cream
200 ml of caramel
1 teaspoon of vanilla (optional)
To prepare the base of the pie, grind the Cookies Marías in the blender, melt the butter and mix well with the ground cookies in a bowl. Then, arrange the mixture in a glass or plastic refractory, covering all the edges well.
Cut the bananas into slices and spread them on the biscuit base. Then add the caramel and vanilla if you like. Finally, cover everything with the whipped cream.
Put the cake in the freezer for 3 to 4 hours and it will be ready to serve!
4. Red fruit ice cream… vegan 😊
1 bag of frozen red berries (raspberries, blackberries, strawberries)
½ L of coconut milk (you can use normal or light milk if you prefer)
Sweetener of your choice
Place the red berries and sweetener to taste in the blender. Pour the coconut milk until you get a thick mixture. Then put the mixture in a container and put it in the freezer for 2 to 3 hours. Serve in small glasses, it will surely refresh you!
5. Dalgona coffee … classic or matcha 😊
CLASSIC DALGONA COFFEE
2 tablespoons of ground coffee
3 spoonfuls of sugar
2 tablespoons hot water
Milk of your choice
In a bowl, beat the ground coffee with the sugar and water with the help of a mixer or manually with a fork. The mixture will change color, clearing up, until you get a coffee cream.
Then, pour milk to taste in a cup or glass, I recommend adding ice. Finally, spoon the coffee cream over the milk in a flake. The best coffee for the summer!
MATCHA DALGONA COFFEE
½ cup sugar
½ cup of water
3 tablespoons matcha powder
2 egg whites
Place ½ cup of sugar and ½ cup of water in skillet over medium heat. Stir the mixture and cover for 3 or 4 min.
Then beat the 2 egg whites with the help of a mixer and gradually incorporate the mixture of water with sugar. Add 3 tablespoons of matcha powder until a thick mixture is left.
Finally, serve milk in a glass with ice and add the matcha cream, such a delight!
